The Recipe of Spicy Beef & Rice

You need these ingredients to cook this spicy dish. 

  • 1 tablespoon cooking oil (olive oil, vegetable oil, etc.)
  • 500g (around 1 lb) ground beef (mince) or diced stewing beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked rice (your choice of long grain, basmati, or jasmine)
  • 2 cups beef broth
  • 2 tablespoons chilli powder
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 bell pepper, diced (optional)
  • 1 lime (optional)
  • 1 knob of grated ginger (optional)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

Flavour Base
  • Heat the oil in a large pot or skillet over medium-high heat. 
  • Once shimmering, add the ground beef (or diced beef) and cook until brown, breaking it up with a spoon.
  • Drain excess grease as needed.
  • Add the diced onion and cook for a few minutes until it softens and turns golden.
  • Stir in the minced garlic and cook for another minute until fragrant.

Simmer & Season
  • Pour in your uncooked rice and give it a good stir to coat it in the flavourful beef and onion mixture.
  • Add the beef broth, chilli powder, cayenne pepper (if you like an extra kick), red pepper flakes (if using), soy sauce, and a generous pinch of salt and pepper. 
  • Give the pot a proper stir.
  • Bring the pot to a rolling boil, then lower the heat to a gentle simmer. 
  • Cover it and let it simmer for 15-20 minutes or until the rice is tender and the liquid is mostly absorbed.

Spice Check & Fluff
  • Remove the pan from heat and carefully lift the lid to check the rice. 
  • Have a go at tasting it — does it need a pinch more salt? A touch more spice? Tweak it to your fancy.
  • Fluff the rice gently with a fork to separate the grains to help release steam and create a lighter texture.
