Roasted Turkey With Lemon and Herbs

No Christmas feast is complete without a roasted turkey. This recipe uses lemon, garlic, and fresh herbs to give the turkey a zesty and aromatic flavour.

You will need:

  • 1 (12-pound) turkey, giblets and neck removed
  • 1/4 cup kosher salt
  • 1/4 cup sugar
  • 4 quarts water
  • 2 lemons, halved
  • 1 head of garlic, halved
  • 1 bunch each of fresh thyme, rosemary, and sage
  • 4 tablespoons unsalted butter, softened
  • Salt and pepper, to taste

Instructions:

  1. Brine the turkey overnight in water, salt, sugar, lemon, garlic, and herbs.
  2. The next day, preheat the oven to 190°C. Rinse and dry the turkey.
  3. Squeeze lemon juice over the turkey and stuff with lemon, garlic, and spices. Tie the legs together and tuck the wings under. Rub butter, salt, and pepper over the skin.
  4. Cover the turkey with foil and roast for 2 hours, basting every 30 minutes.
  5. Remove the foil and increase the oven temperature to 220°C. Roast for another 30 minutes or until the turkey is golden brown and cooked thoroughly.
  6. Let the turkey rest for 20 minutes before carving.
  7. Serve with gravy and cranberry sauce.

 

Vegetarian Mushroom Wellington

This vegetarian main course is a pastry-wrapped loaf filled with mushrooms, lentils, cheese, and nuts. Lots of goodies with fewer calories, making it perfect for a guilt-free festive meal.

You will need:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 2 teaspoons each of fresh thyme and rosemary, chopped
  • 2 tablespoons chopped parsley
  • Salt and pepper, to taste
  • 1/4 cup cranberry juice
  • 1 cup cooked green lentils
  • 2 tablespoons chopped walnuts
  • 1/4 cup grated Parmesan cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten
  • Sesame seeds for sprinkling

Instructions:

  1. Heat the oil in a pan over medium heat. Add the onion and garlic and cook until softened and golden.
  2. Add the mushrooms, thyme, rosemary, salt, and pepper and cook until browned and dry.
  3. Add the cranberry juice and simmer until absorbed.
  4. Pulse the mixture in a food processor until chopped.
  5. Stir in the lentils, walnuts, parsley, and parmesan cheese. Season to taste.
  6. Preheat the oven to 205°C. Line a baking sheet with parchment paper.
  7. Roll out the puff pastry into a rectangle. Spoon the mushroom filling over the centre and fold the edges over.
  8. Flip the pastry over and transfer it to the baking sheet. Cut slits in the top of the pastry and brush with egg. Sprinkle with sesame seeds, if desired.
  9. Bake for 25-30 minutes, until golden brown and puffed.
  10. Let cool for 10 minutes before slicing and serving.

 

Cranberry and Pecan Wild Rice Salad

This salad isn't just perfect for your Christmas Day menu. You can whip this together whenever you have guests over for lunch and don't feel like cooking up a storm. This festive salad has wild rice, cranberries, pecans, and a tangy orange dressing.

You will need:

  • 4 cups cooked wild rice
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. Toss the wild rice, cranberries, pecans, and parsley in a large bowl.
  2. Take another smaller bowl and whisk the olive oil, orange juice, apple cider vinegar, honey, and Dijon mustard.
