Garlic & Herb Roasted Chicken Breast Tomato Penne Pasta Recipe

  • Penne Pasta
  • Italian Tomato Sauce (cheque the label for halal certification)
  • Sunflower Oil
  • White Onion
  • White Wine Vinegar
  • Carrot
  • Red Chilli

  • Brown Sugar
  • Vegetable Bouillon (or stock cube)
  • Parmesan Cheese
  • Chives (fresh, chopped)
  • Parsley (fresh, chopped)

Now follow these steps to cook this delicious dish. 

 

Roast the Chicken

  • Preheat your oven to 200°C (400°F). 
  • While it's heating, grab a bowl and mix together a drizzle of olive oil with some minced garlic and dried herbs (thyme and rosemary work well).
  • Pat your chicken breasts dry with a paper towel and rub that garlicky, herby mix all over them. 
  • Then, pop the chicken on a baking tray and roast for 20-25 minutes, or until it's cooked through and looks golden brown.

Cook Pasta

  • Fill a large pot with water, add a good pinch of salt (about a tablespoon), and bring it to a rolling boil. 
  • Toss in the penne pasta and cook it for 10-12 minutes, or until it's 'al dente' — that means cooked but still a bit firm when you bite into it.

While the chicken and pasta are doing their thing, let's make that delicious tomato sauce. 

Sauce Time

  • Heat a bit of sunflower oil in a large pan. Once it's hot, add the chopped white onion and cook until it's soft and translucent (about 5 minutes). 
  • Toss in the minced garlic and chopped red chilli, and let those flavours mingle for a minute or two until they smell fragrant. 
  • Now, pour in the Italian tomato sauce, white wine vinegar, grated carrot, and a pinch of brown sugar. 
  • Give it a good stir and let it simmer gently for about 10 minutes, or until it thickens up a bit.

Bring it Together

  • Once the chicken is cooked, take it out of the oven and let it rest for a few minutes. Then, slice it into strips or bite-sized pieces. 
  • Drain the pasta and add it to the pan with the tomato sauce. 
  • Stir everything together until the pasta is well coated. 
  • Then, toss in the chicken pieces so they warm up and soak up all that delicious sauce.

Taste & Serve

  • Now, taste your creation and add a bit more salt and pepper if needed. 
  • Once you're happy with the flavour, divide the pasta and chicken into portions and serve it up hot. 
  • Top with a sprinkle of parmesan cheese and a scattering of chopped chives and parsley for a fresh finish.
