Recipe of Protein Pancakes

Before heading to the kitchen, grab these ingredients. 

  • 1 Egg
  • 1/2 cup Soya Flour
  • 1/2 cup Plain Flour
  • 1/4 cup Milk (or your favourite milk alternative)
  • 1 tablespoon Vegetable Oil
  • Pinch of Salt
  • Sugar
  • Baking Powder
  • Buttermilk Powder

For the Berrylicious Topping:

  • 1/2 cup mixed berries (blackberries, blackcurrants, raspberries, strawberries)
  • A dollop of Coconut Yogurt

Instructions

Here's your step-by-step guide to making Bozu's Protein Pancakes. 

Mix Master

  • Grab a bowl and crack in that egg. Whisk it up until it's nice and frothy.
  • Now, add in the soya flour, plain flour, a pinch of salt, a spoonful of sugar (or to your taste), a bit of baking powder (about a teaspoon), and the buttermilk powder.
  • Pour in the milk and oil, then whisk everything together until you get a smooth batter. 
  • Don't worry if there are a few small lumps — that's totally normal.

Berrylicious Topping

  • While your batter is resting, let's whip up that fruity topping. 
  • Chuck your berries into a small saucepan with a splash of water and a squeeze of honey or maple syrup (if you fancy it a bit sweeter).
  • Let it simmer over low heat for about 5-10 minutes, or until the berries start to break down and the mixture thickens up a bit.
  • Give it a taste and add a bit more sweetener if you want.

Heat Things Up

  • Grab a non-stick frying pan and pop it on medium heat. 
  • Add a little bit of oil (or butter if you're feeling indulgent) and swirl it around to coat the pan.
  • Once the pan is hot, it's time to pour in your pancake batter. 
  • Use a ladle or spoon to make pancakes about 4-inches in diameter. 
  • Cook for about 2-3 minutes, or until you see bubbles forming on the surface and the edges start to look set. 
  • Then, use a spatula to carefully flip each pancake and cook for another 1-2 minutes on the other side.
