Recipe of Thai Green Curry & Basmati Rice

Here's what ingredients you'll need to cook this dish.

  • 1 pound boneless, skinless chicken thighs
  • 1 cup basmati rice
  • 4 ounces (about 1/2 cup) pre-made Thai green curry paste
  • 1 can (13.5 ounces) coconut milk
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup baby corn, halved or quartered
  • 1 cup sugar snap peas
  • Carrots
  • 2 cloves garlic, minced
  • Thai basil
  • Cilantro
  • Sage
  • Spices (turmeric, pepper, etc.)
  • Chicken broth (optional)

Here’s how to cook this recipe.

Cook Rice

  • Start by rinsing your basmati rice under cold water until the water runs clear.
  • Combine the rice and water in a saucepan (usually 1:2 ratio of rice to water).
  • Add a pinch of salt for extra flavour.
  • Bring the water to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes. Or until the rice is tender and has absorbed all the water.
  • Fluff it with a fork and set it aside.

Curry Time

  • While the rice is doing its thing, heat a bit of oil (any kind you prefer) in a large skillet or pot over medium heat.
  • Toss in the chopped chicken thighs and cook until browned all over. It's okay if it's not cooked through, it'll finish in the sauce later.
  • Add the chopped onion, garlic, and other carrots. Sauté for a few minutes until they start to soften.
  • Now, grab that Thai green curry paste. Spoon a good amount into the pan and stir it all around — making sure the chicken and veggies get a nice coating.
  • Let those lovely smells fill your kitchen for a minute or two.
  • Pour in the coconut milk and mix it all up.
  • Let it simmer gently for about 10 minutes, or until the chicken is cooked and the sauce is a bit thicker.

Veggie Power

  • Now, add the rest of your veggies — the red bell pepper, baby corn, and sugar snap peas. If you're using any other quick-cooking vegetables, toss them in now too.
  • Cook for another 5-7 minutes, or until the vegetables are tender-crisp.
  • Turn off the heat and stir in most of the fresh Thai basil and cilantro.
  • Save a few leaves for garnish.

Plate It Up & Dig In!

  • Divide the fluffy basmati rice among your bowls and top with the fragrant green curry.
  • Sprinkle over the remaining fresh herbs for an extra burst of flavour and a touch of elegance.
  • If you're feeling fancy, add a few sprigs of sage for an extra aromatic touch.

Meal Prep like a Pro

With a few clever tricks, you easily turn Thai Green Curry into your weekday meals. Here’s how.

Rice Revival

Don't just cook enough rice for one meal — go big! Double or even triple the amount you normally make. Leftover basmati rice is a lifesaver.

It reheats beautifully and is used as a base for other dishes throughout the week. Think stir-fries, burrito bowls, or even a quick egg-fried rice when you're in a pinch.

Chill Out

Once your curry is ready, let it cool down completely before you even think about storing it. This stops it from getting watery and prevents any unwanted bacteria from crashing the party.

Portion Control

Invest in some good-quality meal prep containers. Glass is always a winner because it doesn't absorb any smells or flavours, unlike plastic.

Divide your curry into individual portions. This way, you grab a container and go, no fussing about measuring portions when you're in a rush.

Reheat and Enjoy

When you're ready to eat, simply pop your curry in the microwave for a couple of minutes, or warm it up gently in a saucepan on the stove. If it seems a bit thick, just add a splash of water or coconut milk to loosen it up.

Remember to save those fresh herbs for the last minute — sprinkle them on top just before serving for the ultimate flavour burst.
