Recipe of Thai Green Curry & Basmati Rice

Here's what ingredients you'll need to cook this dish. 

  • 1 pound boneless, skinless chicken thighs
  • 1 cup basmati rice
  • 4 ounces (about 1/2 cup) pre-made Thai green curry paste
  • 1 can (13.5 ounces) coconut milk
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup baby corn, halved or quartered
  • 1 cup sugar snap peas
  • Carrots
  • 2 cloves garlic, minced
  • Thai basil
  • Cilantro
  • Sage
  • Spices (turmeric, pepper, etc.)
  • Chicken broth (optional)

Here’s how to cook this recipe. 

Cook Rice 

  • Start by rinsing your basmati rice under cold water until the water runs clear. 
  • Combine the rice and water in a saucepan (usually 1:2 ratio of rice to water). 
  • Add a pinch of salt for extra flavour.
  • Bring the water to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes. Or until the rice is tender and has absorbed all the water. 
  • Fluff it with a fork and set it aside.

Curry Time

  • While the rice is doing its thing, heat a bit of oil (any kind you prefer) in a large skillet or pot over medium heat.
  • Toss in the chopped chicken thighs and cook until browned all over. It's okay if it's not cooked through, it'll finish in the sauce later.
  • Add the chopped onion, garlic, and other carrots. Sauté for a few minutes until they start to soften.
  • Now, grab that Thai green curry paste. Spoon a good amount into the pan and stir it all around — making sure the chicken and veggies get a nice coating. 
  • Let those lovely smells fill your kitchen for a minute or two.
  • Pour in the coconut milk and mix it all up.
  • Let it simmer gently for about 10 minutes, or until the chicken is cooked and the sauce is a bit thicker.

Veggie Power

  • Now, add the rest of your veggies — the red bell pepper, baby corn, and sugar snap peas. If you're using any other quick-cooking vegetables, toss them in now too.
  • Cook for another 5-7 minutes, or until the vegetables are tender-crisp. 
  • Turn off the heat and stir in most of the fresh Thai basil and cilantro. 
  • Save a few leaves for garnish.

  • Divide the fluffy basmati rice among your bowls and top with the fragrant green curry.
  • Sprinkle over the remaining fresh herbs for an extra burst of flavour and a touch of elegance.
